Go to Control Panel and select Phone.
I was not able to restore Dual mode selecting "Settings/Phone". I tested "Save" button in this menu too.

So, I was forced to switch to a special version with 3-choice menu (Dual/3G/GSM).

NOTE: Then I de-installed application my N900 was in 2.5G mode (GSM) and Dual mode was NOT restored during application removal - it stayed in 2G. I didn't try another ways like SIM card removal-insertion...

Additional info: TMo SIM card greyed out the mode in "Settings/Phone" pannel. It just show "Network mode: GSM" (or Dual).

What this needs is a DBUS call of its own. The email app (for instance) ticks a "I'd like 3G if available please, for the next five minutes or until I cancel". The DBUS handler (sorry if that's not the right term) looks at
  • The 2G/Dual/3G setting as has been discussed
  • The availability of 3G service
  • Other outstanding requests like this one
and chooses what service should be used. The phone would generally be set to Dual mode (maybe even call this Dual-request), and the timeout in the call above guards against apps that die using the battery effiecient alarm API.

This works nicely for all the apps that participate in this DBUS convention. For apps that don't know about it, users would still have to manually shift the network state.

For me, the dual mode is "get me the best you can", and 2g is "save power please".

With my operator, dual or 3g, when inside 3g coverage, drains the battery in about 4 hours whereas 2g lasts days, so I usually have it forced to 2g.
Now I don't know before switching to dual or 3g, whether there is 3g signal available, and sometimes it takes quite long to acquire 3g even if it's available, so I've previously picked Dual Mode from setup, as this automatically falls back to 2g if there is no 3g, and doesn't leave me offline.

And of course, if you only live and move in areas where there's always /some/ 3g coverage, however weak, you might prefer to lock it to 3g.. There are use cases for all 3. :/

I'll see how it goes: If enough (read: a couple more) people want to be able to select Dual mode, too, I'll give up and add the option to the -devel version and promote that.

Ideally, I'd like to be able to keep both modes of operation but the status menu area doesn't really lend itself to having settings there, short of a Control Panel applet which is just plain wasteful in this case - an applet that only has "Enable mode selector"? Heh...

Especially for the dual mode version. I don't use 3G only anymore since I only use cellular network when moving (wifi when at home/work), and I want to be able to connect to the internet even when the only available network is 2.5G, but still benefit from 3G/3.5G speed when it's available.

regarding the three-mode switching, that could need one less click if there were 3 small buttons/widgets : 3G, 2G, dual, with coloring of the selected parameter, instead of only one only showing the current parameter used and switching to the other when clicked.

Yep, already installed the one with dual mode. Works nicely!

Sat down in couch, switched from wlan to packet data, 2g -> dual mode, opened gpodder and podcasts came down 600kbytes/sec 3.5g speeds, went to kitchen and speed dropped to about 10kbytes/sec on 3g/3.5g, phone switched to 2.5g by itself shortly after, and speed improved to 25kbyte/s, worked just the way I wanted it

And back to 2g only for the powersaving goodness after podcast downloads were completed (in the couch with the nice signal, of course)...
