It depends on the IM service (icq, skype, ...).
For example, You can define a new availability profile, and set skype to
"online" and icq to "invisble".

Jabber accounts have Invisible as an option, yes (which Gtalk basically is).

If you really want it, you could always add Gtalk as a generic jabber account then (using talk.google.com as server). You might possibly lose some special features though.

I get "jabber calls" as an icon for contacts on my regular jabber account. It would be worth trying before saying it won't work.

On extra protocols, the GaduGadu also doesn't have invisible 
1) Connected
2) Busy
3) Disconnected
But how can I set "Invisible"?
