Mecha!

I can't recommend Gundam or Macross enough. However, since they have running for decades, it can be hard to be introduced in the world. So, a quick intro would be to wade in the latest series (Gundam Unicorn/Macross Frontier) to get the vibe, and then backtrack to the originals to fully appreciate the universe.

The things I'm surprised noone mentioned yet:
- Ghost in the shell (2 series, 3 movies)
ohh yes those are my favorites... even made a ringtone and sms sound from the chant :-D

An other good series is Ergo Proxy (very dark and gritty)

Deathnote is really good series as well (and can be found as manga books fairly easy... if you are in to that kind of Manga)

Lain - Very strange and psychadelic series, but mesmarizing... and is only 13 episodes.

Manga movies I can recommend (along with alot of the previous posters examples):

Tekkokinkreet - its pretty tough and cool as two street kids fight for their turf against yakuza and hitmen... Very wel done and has alot of details in the drawings and background compared to alot of other Manga.

Perfect Blue - Manga Noir murder mystery.

Paprika - also very strange and psychadelic but very well drawn and its captivating and wierd (in the good way) :-D

Let me add that if you liked Serial Experiments Lain, you might want to check out Haibane Renmei and Niea under 7, both by the creator of Lain. Very different subject matter though.

Generally if a series gets me to watch multiple times, it's pretty good. Once you've seen more super robot and mecha stuff, I'd recommend Kidou Senkan Nadesico (Martian Successor Nadesico is the US title,) which I have re-watched at least 8 times over the past 10 years.
