I am trying to extend the virtual memory to my wife's Nokia 770 - she has 300MB+ left on her RS-MMC Card, but I am getting the message: "Unable To Extend Vitrual Memory" - how come?

Have you tried re-formatting the MMC card? Obviously you'll need to backup any data already stored on the card, then go to: FILE MANAGER>MAIN MENU>MEMORY CARD>FORMAT.

Is that the only thing I can do?

I just extended the virtual memory on my own Nokia 770 and it had movies on it.

How come the same didn't work on my wife's Nokia 770?

In the short time I've owned a 770 the one thing I've learned, if nothing else, is that they are a law unto themselves. In theory yes it shouldn't matter whether you already have data stored on the card when extending the virtual memory, provided there is enough space e.g. 64MB. However, in the case of your Wife's 770 it would appear that extending the virtual memory is not working despite having more than enough free space, and the only possible solution I can suggest is to re-format the card.
