Hi,
I have N900 and I'm very happy with it

I wondered how the app Install process is working:
I noticed that when I download an app from this site,
It a light .install file, and when I copy it to my device, it downloads the actual app from a unknown site.

Where's the device connecting to download the app?
It this the only way to install apps on N900? You cannot download a 'full' version of the app before installing it?

It downloads it from the maemo.org servers. And yes you could download an entire app but then it would not show up in the package manager and could potentially cause problems(I think). Best way is to install them via Application Manager on the N900.

go to application manager in the menu. it has libraries of apps. or 'catalogues'. these are stored on remote servers. some hosted by nokia.

so when you click a 'download' link from this site its downloading from the same server.

so to download it straight just go to application manager.

You should take a look in the wiki. http://wiki.maemo.org/Downloading_apps
When I was new to the N900 I had to learn it is all similar to other Linux OS's so there is something called repositories were the apps come from and being maintained and updated. The .install file is like a shortcut or .torrent file I think everything necessary is in there to install apps.
