Does any one know how to extract and repack nokia official Firmware?

flasher-3.5 -F fiasco.bin -u to unpack
Use fiasco-gen to repack (fiasco-gen --help for commands)

A custom one without nokia bloatware would be nice.

No more "get started" widgets and useless shortcuts and bookmarks...

Hmm, tbh, it would be easier to flash a device with stock firmware, do all customizations then backup the rootfs with dd and distribute that image.

How would you get image back onto the machine - using dd again, or can you use the flasher?

As for cooked FW, those are usually made for systems where most files reside on ROM, like Symbian's Z: or HTC devices' ROM chips.
The N900's filesystem is easily editable by anyone, cooked FW would simply be precustomized images.
