Some sort of ability to synchronize with Evolution data server on Ubuntu or Tomboy would be great.

All of the above, especially with alarms. Also the ability to link tasks with contacts and calender events.

KISS Keep it Simple, I used to use the tasks in Windows Mobile on my PDA, but it was always a pain that it had too many options to check that it wasn't worth it. Keep all the options on one page, and have good defaults.
I'm going to start development this weekend. Just installing Ubuntu on my laptop now.
