I hope you have figured how to add folders inside other folders. If not I can tell you, because it is easier to manage menus with this.
With Linux-powered N900..ANYTHING is possible

@Metalov did you uninstall Catorise? if so then icons also will be removed as part of uninstallation. If you want Catorise icons then you have to install it and make a copy of /usr/share/icons/hicolor/48x48/hildon/ to user space (/home/user/MyDocs) which will have Catorise icons as well. then uninstall Catorise and copy the icons back to original location, now you will have Catorise icons. hope this help you.
