Is Auto-Download enabled? Are you connected to the internet? If you're not connected, does it try to connect for you?

Maemo Mapper is supposed to hide the download progress bar if you're not connected, but maybe it's not working all the time. I've tried to reproduce your problem, but I haven't run into it yet.

I admit - changing route during car drive is crazy idea. My personal problem is connected with "auto center" and "autorotate" functions. I often consiously or accidentally touch sreen and scroll map. It disables autocenter function. Turning it on via menu is hard.

PS: Hardware buttons are (in my humble opinion) rather comfortable way to zoom. I don't have any problems with them.

I don't touch my TomTom navigator while driving. I mostly simply listen to Jane or Chiara, and in very rare cases I take a quick glance at the screen. I prefer to stay alive..

On my N800, it's easy to toggle between autocenter lead, autocenter lat/lon, and autocenter off using the center button of the d-pad. If I pan the map, a quick press of the button restores the autocenter setting I had. I don't know if the N810 has something similar, but you should be able to map that to some button. My D-pad is set up with up/down being zoom/unzoom, right/left being rotate the map, and the center button being the autocenter toggle. The home/menu/return button can also be mapped as desired.

hmm, here pressing the center of the dpad only toggle between the autocenter options, it do not turn it off after the third press...

That is correct. The center dpad button will not turn Auto-Center off, but you can just tap anywhere on the screen to turn it off. It does turn it on, though, if it's not already on. And if/once it is on, pressing the button again will allow you to toggle between the different types of Auto-Center (lat/lon and lead).

Last I checked you can hit the menu button and get the menus while in full screen mode

The waypoint announcement fontsize remains on default even if I set xx-large in settings. Help says that all info windows incl. announcements are affected by the fontsize setting. I'm using the default theme on N810 with MM 2.4.1.
Earlier versions had adjustable announcement fonts and made reading them easier.
