from what I remember when I used to do mobile faxing, not all mobile phones support the appropriate class.. I remember testing a bunch of handsets and found that the Ericsson SH888 did the right thing, but none of the Nokias did at the time. Here's a useful guide:

once you've got working fax s/w on the tablet, then you should be able to use a usb->serial->modem or bluetooth->phone fax device!
