If your PC is running Linux, I'd recommend using NX, from NoMachine, instead of VNC (if possible). The Maemo NX client is still rather buggy, but hopefully someone will attend to it soon. The main advantages over VNC are lower bandwidth requirements, and built-in SSH tunneling, which is pretty darn important.

And if you're running a Windows or Mac computer, I recommend NTR Connect. (That is, I recommend it to control one computer by another; it's not NIT-compatible.)

VNC over the Internet is fine. You can even use the Java client to run it in a (desktop) browser. I use VNC over the Internet (through an encrypted SSH tunnel) to remote control my home PCs (both Windows and Linux) all the time. The tablet does VNC just fine (and the encrypted SSH tunnel, too! Thanks, tsocks!) but the desktop's screen is usually a lot bigger and so I end up having to scroll around the screen a lot...

I'm going to love seeing remote desktop software that actually works flawlessly on this device.
Unfortunately I can't seem to connect to my rack from the N810. Still, my network is a little weird and it's probably better this way.

I had seen a service like Ghost before but I can't remember what it was called. A quick search gave me this list of similar services though.

Using NX or VNC on the N810 with Linode.com (or prgmr.com or slicehost or even Amazon EC + Ubuntu) might be doable. I could test that when I get time because I have a Linode.com account. But the fact of the matter is, I really prefer to just use my N810 as it is.
EDIT: sorry, I cannot test the NX or VNC scenarios because I do not have a GUI on my Linode.com server.
