On the N810, I use Fring. If it also makes its way to the N900, I'd use it there too, personally.
Nimbuzz never got ported - and I'm personally not a fan of the web version via Maemo's browser. But lately, I've been using Nimbuzz via the iPhone and I know it would be better on Maemo 5 if done well.

But a good front-end to MPlayer is far superior compared to VLC.
Any particular reason you prefer Nimbuzz over Fring or Pidgin or even Gizmo for that matter?

I'm more thinking along "Apps I don't want to see on the N900" among them... anything that would go to the cloud, sync with the cloud or send any data to the cloud for storage.
In other words I want software to obey me not the cloud or web2.0 and I prefer my data not clouded
I do hope it will be possible to rip out any such software and replace it with local alternatives. If I want syncing I'll setup my own syncml server and sync that
