Though does their API give full access to what most Facebook apps do? Like the one on the iPhone created by Facebook themselves?

Yes, the developer would have to create a new Application on Facebook which the developer would use to get/send data to Facebook.
I believe you have save some authorization token returned when someone authorizes the app to give it access to their facebook account.
I might try hacking a simple python gui which talks to Facebook (I've done Facebook Application Dev before...)
