Multi-touch won't be an issue. This will only matter on apps that actually *use* multi-touch.. and those apps won't work correctly on the PC or any non multi-touch device.
So for example, if someone made a flash version of guitar hero (or whatever the iPhone version of it is).. well - You could go there.. see the app.. and see all the buttons coming at you - but you'd only be able to hit one at a time. And you would get boo'd off stage pretty quickly for being a failure of a failed wannabe guitar player.
Flash itself won't care whether your device has multi-touch or not.. it just allows flash developers to use it in their apps.
(this would be my understanding.)
