I ended up using Flite on my N810 for TTS back in August when I got my wisdom teeth pulled. My family was somewhat dismayed when they realized that I wouldn't have to shut up for a few days.

1. Install espeak
2. Open X-Term
3. type:
tracker-status [enter]
espeak [enter]
type words and press enter...

start the application before going to bed, put your n900 somewhere close. if microphone detects sound above a pre-defined noise level, start recording. stop recording after say 30 sec of silence.
or a script to start video recording if detecting noise above a pre-defined level...

tracker-status is absolutely unneeded here - I used that in my original post only to show how awesome the machine is thank to it's linux openness (piping the output from one program to the input of another one).
