You don't need to restart anything
Did you put openfile in /usr/bin?
Did you get an error if you run "openfile" in x-term?
Check permissions: "chmod +x /usr/bin/openfile"

Yes, I did put it in the right place.
When testing what you just wrote i get
sh: openfile: Permission denied
and with chmod i get operation not permitted.

I am lost when it comes to terminal stuff, so what am I doing wrong here?

install rootsh from app manager

then when you open terminal type root to gain root access

warnings about being root go here

then you can do the chmod +x command

I have rootsh.
When using root i got:
usage: chmod [-R] MODE[,MODE]... FILE...

when i type only openfile i still get permission denied. Still on square one i am afraid

This means you probably spelled something wrong.

Open x-term and type:
sudo gainroot
chmod +x /usr/bin/openfile

Sure,

The file is named img.desktop (no other fileextension like txt or anything)

Path and pic is correct and exists

[Desktop Entry]
Encoding=UTF-8
Version=0.13
Type=Application
Name=Image
Exec=openfile '/home/user/MyDocs/.images/Sketch/Face.jpg'
Icon=general_image

EDIT: Funny thing, when i typed openfile '/home/user/MyDocs/.images/Sketch/Face.jpg' into the desktop command execution widget it actually opens the image viewer, its blank and says file format not supported. Weird. The file works when opening it through filebox.

Yep, that's weird. The binary uses exactly the same code as filebox.
What you get if you try openfile '/home/user/MyDocs/.images/Sketch/Face.jpg' in xterm?
Did you try another image?
