Something like Max/MSP or PureData for music composition.

Something for mixing video streams, e.g. for VJ'ing.

Music visualisations (like Winamp plugins, e.g. milkdrop IIRC)

A simple flight simulator (yeah, I know that's not so realistic)

Still, after all this time, a decent To Do list with a widget or Calendar integration. If I wasn't cycling half-way around the world I'd code it up in Python right now.

In spite of the above, the flexibility of the N900 blows my mind on a daily basis. Is there nothing it can't do!?

Simply use rsync to copy the contents of /var/cache/apt/archives to a memory card or over the airwaves/data cable. That directory contains every package you've installed, until you clean it (apt-get clean/autoclean) that is.

Regular backups would take care of the cleaning problem - just don't clean it without rsyncing first.

Code:
rsync -avP /var/cache/apt/archives /media/mmc1/somedir/
Or use Grsync if you prefer.

Please forgive me for mentioning this over, and over, and over again at every opportunity - when someone starts a thread like "what kind of applications are you missing in the N900?"

1) 3G Video call (it's more practical from where I'm using my N900)
2) Voice navigation with Ovi (Sygic does not have APAC maps)

Thank you in advanced to whoever successfully completes these applications!

Hi there ...
I am missing Skype SMS support. Is it so hard to implement or are there political reasons to not support sending SMS from my skype account ?!?
I would really love this as the rates for international SMS with skype are much better then the standard rates.

2nd would be proxy authentication settings for every connection you configure. Only thing I can use at work are browsers because they ask for user / password

Greetings from the Netherlands Solar

A good system info tool (like Conky) that would also tell me why my N900 just crashed 2x in a row and suffered 4x unexpected reboots, Windows Event Viewer style.
