Personally I think the media player in Maemo is fine, just like that with the iPod, one just has to embrace the logic in which Maemo works and so far it seems quite intuitive for me - different from the iPod of course. That doesn't mean there isn't room for improvement of course. For example, I agree it would could to be able to create a playlist from the playlist list directly.
1. Click the header while listening to music and click save playlist to start. You can then add new songs to it, for example, by clicking a song title in a list until a context menu appears that allows you to add it to the list - or you could do this from the title menu to add all songs in an album for example. "Total shuffle" you can get from the media player main menu.
2. According to the manual physical controls in headsets are not supported as the third connector is used for video out apparently. I guess the Bluetooth ones would work. I agree this is something that needs changing when Maemo goes mainstream! For a mobile computer, though, I don't mind - I never used remote with iPod touch either personally.
3. What is slow with the desktop widget in your phone? Seems OK to me. I think the updating frequency of the equalizer is quite lax, though.

But I really can't do it, I tried but when I long press a single track, it comes out the menu add to playlist but It add all the track.. and then when it's paplying I have the whole music library... I hate it..
I know you already did it but I am a terrible noob and I can't make it work... Can you try again? :-)

First, make sure when you go to music that you sort your music by artist or album, otherwise it just lists every mp3 on your device.
Then to find a specific song after you have sorted all the music select the artist, then click, on the artist to see their albums, then click on the albums to see the songs in the albums. When you see a song you want to play/ add to a playlist, don't click on it or highlight it first.
Once you see a song you want, even if it's not highlighted, just press and hold it. If you're in 1 album and selecting one song it, the option to add to playlist should come up to let you add it to the playlist.
Maybe yours has a glitch?
I think you may be adding all library to playlist because you're selecting the song from the listing of every mp3 on your device(all library) instead of sorting them by Album or by artist first.
