This "word wrap" everyone talks about is a feature from adobe called "reflow". It is used on small screens to adapt big pages across just like the older mobile web browsers do with html.
Basically PDFs can come in as text/image combinations (generally created from Word or Publishing apps) or just Image Scans that people scan magazines/documents from. Reflow only works with text/*image combinations as it knows the actual text to rejustify on small screens. If it is the latter, the it does know recognise scanned text within the image to reflow.
Evince is fantastic.. Cant believe how good it is and many miles ahead of most pdf readers in terms of speed and practical use.
