I just did the same (got my jolla 1 back from daughter, who used it for a few years . Worked like a charm!
Now I have to get up to speed with Jolla/Sailfish again

Be careful, do not update using OTA while modified boot image isnt available for new version, phone wont boot, as OTA overwrite boot with default one.

Is there a procedure for updating, via fastboot (whenever a new version is released here), while preserving the data?
(I'm guessing that "fastboot flash sailfish sailfish.img001" and such will wipe/rewrite the whole partition)

well, i'm just updating via OTA, after boot fail message fastboot flash new boot image.
just make sure updated files are available before you install OTA. i forgot once i had ext4 partition when installed OTA, and then my phone waited couple of days until i was able to recover it )
