Not sure how it works with dreamhost, but I have a domain with 1and1.co.uk. You should be able to set the name server records (I could) to point to the dreamhost server. If the dreamhost setup means that you're IP address is dedicated to your service, then that should be all you need to do. Otherwise dreamhost will have to set the host-header details on their side. But I expect the IP will be dedicated as I don't see how Jabber would work otherwise.
