At the moment the only flavors are Prune and Durian but many more are being developed. Note that Durian requires root access. For all of you waiting for your N900s to ship, yes, the N900 is even better than you think it is. Be happy that you've only seen some videos and read some articles that cannot possibly convey the astonishing mind-blowing overwhelming pure awesomeness that is the N900 experience.

Because if you had actually used an N900 for a while, you'd be even more upset that you don't have an N900 right now. You'd be bordering on insanity with frustration and unfulfilled craving.

So just be thankful.
