So is it possible to upgrade the 810's ram? While 128 MB seems sufficient for a lightweight linux distro, it seems underpowered for most video. From what I've heard and read, the 810 is choking on a lot of the media heavy websites. What can we do?

Not without a hell of a lot of work. Wait for the N900.

You can enable swapping to sd/movinand.
Anything else is simply unrealistic since the memory comes in a package mounted on top of the processor (glued and soldered). Anyway i'm not aware of any commercial solution for omap2 with more memory in the same pop stack.
