You can have two separate "desktops" with different applets visible for each.
The first time you click the application icon, your current desktop setup is saved as desktop 1.
Next time you click, you will switch to desktop 2.
Then, disable all applets and switch back to desktop 1 by clicking the icon again.
All your applets reappear in desktop 1.
Go back to desktop 2, enable another set of applets, switch to desktop 1.
The state of desktop 2 is saved when you switch.
Now you have two sets of applets, and can change between the two desktops quite easily.
It will take ~10 seconds to switch, because hildon-desktop needs to be restarted when switching.
I do not know any other method to make it read the configuration files than restarting it.
