Would you be able to dual boot maemo and a fully functional debian/ubuntu linux? or just fully functional debain linux with capability to send/receive calls/sms and manage contacts?

Err.. what do you mean by fully functional Debian/Ubuntu Linux? Anyway, even now we can run Debian and Ubuntu thanks to various people here (qole, penguinbait, etc..). No reason to suspect why it's not possible on the n900.

But probably not the second (fully functional debian linux with capability to send/receive calls, etc..etc..)

See Easy Debian. Not dual-boot, but even better IMHO.

Since you post the question in the N900 it's interesting to note that your question is actually two questions:

Can the N900 boot more than one OS? I believe so but has someone tested?

Is there currently any alternative OS for the N900? Not that I'm aware of. Having the device publicly available will help.

Deblet turned into Mer. By default Mer is trying to stay as close as is feasible to the look of Maemo 5, but it's setup to make it as straightforward as possible to install whatever window manager you like best.

I can't comment on whether Mer is running on the N900 yet, but it's definitely a target platform.
