You do have a button for selecting the General Profile.
But since you're on the General profile now, your next option is the Silent profile, so that's what showing on the screen. Select it, then you'll see the General profile where Silent is now.
As far as flashlight and brightness applets. You access them off the main screen by tapping in the signal area.

Some apps may have been uninstalled with the upgrade; you'll have to reinstall them to see the same thing as previously.

however, i do remember prior to the update - the 'genera' profile sits beside the 'Silent' profile button. It's not an issue, just wondering if it's changed on purpose.

Honestly, I don't remember the General profile next to the Silent profile. For me, it was either or.
Then again, I could be wrong. I've slept since the last time I switched profiles, so I may forgotten... though, I'm pretty sure I didn't.

You mean this pic below. Tap between the time and the battery icon. drop down menu will show gen. profile
