Yes, you can use it w/out a SIM card and still retain the use of its Wi-Fi but you must be careful about connecting to servers that are in the US.

Can I still receive texts to my phone via my google voice number even without a sim?
Are there any western europe map packs that I can get and use with the N900?
I plan on using my phone to:
alarm clock/ clock
sms people back home in the US (hopefully with google voice)
skype people?
use it as a gps for walking directions
