Even before I ordered by N900, I saw Free42 on the site and it definitely influenced by decision. The calculator on my previous cell phone was pathetic at best.
Free42 is the most perfect of all...

Calendar -> If you've been using Datebook6 on your Palm you'll be disappointed as the N900's Calendar app is much weaker. Check out the GPE Calendar, it's a bit stronger.

Hmmm... My list:
Pixelpipe. I love being able to post pics straight to my tumblr or flickr off the phone. (The phone's basic editing tools are handy for that, too)

Petrovich is a must if you want to be able to share things over bluetooth
I also like Panucci for listening to audiobooks and podcasts
Dosbox would be a killer app for me but it is very slow...
