...I know that the N900 and Maemo 5 is step 5 in a 6 step plan to bring Maemo to the mass market...
...does this mean Maemo 6 and the device(s) associated are step six?
...I read that release 4 was skipped due to chinese tradition or *something*...

No, Maemo 5 and the N900 are step 4 of 5.
No, they're step 5.

So, was I right in assumin Maemo 6 will be the final step in the projection of Maemo into the mass market [?]
