Ok , I misunderstood about the symlink. /opt links to /home/opt which was apparently removed ... just creating the /home/opt dir fixes that again.
Still i lost everyting in there, and also have the error when reflashing eMMC

The /home/opt symlink is just gone and when I type ls in the root dir, I still see /opt, but when I do cd opt it says: -sh: cd: can't cd to /opt
More on, when I try to flash the complete eMMC it starts up but then stops with the message : SU_GET_UPDATE_STATUS_REQ terminated with error code 1.
Any help is appreciated!
