not that hard to detect, like if you look what 64gb chip look like...
Well anyways even if you know what chip to replace, your changes to change to bigger one and have running device afterwards, is near 0%, even if you manage to change it successfully... especially if you don't have access to factory flashers...

The better option to make this possible, is to buy a Black 64GB, and perform a housing swap. Many people have done it (including myself, twice) and it is safer then messing with chips

I'm very interested in outcome of that - especially, that if HtheB really have access to required $$$ tools, it would be possible to change N900's OneNAND to one containing 1GB RAM (quite hard to get exactly same type with more RAM, but still possible)
