I use lots of text files in place of a PIM - I happily keep them on two computers and a USB stick and keep them synchronised.
I installed leafpad so that I could edit them on the N800. The application works perfectly - a lot better than using Notes.
I don't know what I did, but the behaviour of the n800 file manager has changed. It used to be that it would launch Notes for txt files. Now, when I double-click on a txt file, leafpad is launched but without loading the txt file concerned - I am presented with a blank page.

sudo gainroot
cd /usr/share/applications
leafpad defaults.list
The above will create & open up an empty file called defaults.list in the /usr/share/applications folder.
Copy & paste the following into it:
text/plain=hildon-osso_notes.desktop
& then save it.
Now when you open a text file it will open in 'notes' again; you don't need to restart anything as its effect is immediate.
[based on info I found here]

How can I get it to open the file properly?
If I can't, how can I go back to opening the file in Notes?
