Please try to limit this easily installed packages and assuming little or no Linux experience.
EDIT: Ok thanks so much for everyone who replied so far. I have put together the following list of 35 based on the highly arbitrary and unscientific method of eyeballing the responses and seeing which improvements are mentioned most.
So... if I could ask for some further assistance it would be nice to rank this list in order of importance/popularity. Also, if we could put together general info for us noobs on where to get theses apps (for those not in the garage anyways) that would be great.
And of course the list is open source so subtractions/additions are welcome
1. Install Simple Brightness App (brightness adjust in status menu)
2. Install cpumem-applet (icon in status bar to monitor cpu usage)
3. Install callnotify (icon in status bar to indicate missed calls, sms)
4. Install Autodisconnect (auto disconnect idle connections)
5. Install AdBlock Plus and adflashblock-css (blocks ads in Microb)
6. Install Extra Decoders Support (extra codecs for mediaplayer)
7. Install FM Radio Player and fm-boost (unlocks FM radio, boosts signal)
8. Install headphone daemon (mutes headphones when unplugged)
9. Install rootsh (allows root access in X term)
10. Install kernel-power-settings and use "ideal" (warning: This voids your warranty) (see Overclocking thread for more details and current info)
11. fMMS (send and receive MMS)
12. VIM or Leafpad (Text Editors)
13. Angry Birds (game)
14. Conky (monitor cpu, memory, uptime and more)
15. Battery eye or battery graph (monitor battery usage)
16. Additional audio codecs (extra audio codecs)
17. Tweakr (allows more profiles than general and silent, a couple other nice settings)
18. Call forwarding applet (more options for call forwarding)
19. Vertsms (portrait support for SMS)
20. Live wallpaper (see Live Wallpaper thread for more detail)
21. Desktop Activity Manager (?)
22. Petrovich (send files via Bluetooth, no longer needed since pr 1.2)
23. PicoDrive & DrNokSnes (Megadrive / SNES Emulator)
24. Firefox Mobile Beta
25. Easy Debian! (VM to run Debian apps, comes with Open Office and Iceweasel (Firefox for Linux))
26. Free Office Viewer (view Office docs)
27. Worldtv99 (playlist for live TV, requires KMplayer)
28. Healthcheck (check system health such as uptime, dead pixels, mem usage)
29. Recaller (allows you to record system sounds, mic and phone input)
30. Mobile Hotspot (turn N900 into a Wifi Hotspot)
31. Hermes Sync (enrich contacts w/social network data)
32. Media Box (alternative media player)
33. Pianobar/Pypianobar (Pandora client)
34. Catorise (organize apps menu the same way it is organized in app mgr)
35. KMPlayer (alternative media player)
