Just for my own amusement, I hooked a standard 1/8" AV cable (the one that came with my digital camera) to the headphone jack and plugged it in to my N800 and N810. None of the (left/right/video) RCA outputs put out a video signal. If it's there, it requires software too.
Forgive my ignorance, but would that be possible to switch back and forth via software?

Software would only be needed if the device implemented some kind of software controlled switch between audio and video out. With the TV out on the chipset hardwired to the headphone jack in replacement of the audio pins, all you should need is a suitable X11 configuration, or maybe not even that (if the TV output defaults to cloning the primary display).
