Thanks for your help. I do use pop3 on desktop. Ubuntu Lucid 10.04 using Evolution. Emails are always left on the server. There are no options selected saying 'delete after x days'. I use the web interface of GMX to delete stuff 'permanently' as a precaution.
It's the not the OS or mailreaders as I use a number of OS (xp, vista, 7, linux various flavours), thunderbird, links/lynx, evolution. Mail setup is not an issue as such.
It was some random moment of stupidness where i selected delete all, forgetting that IMAP was enabled. It removed everything in the inbox on GMX. And the desktop evolution hadn't fetched those items because i didn't enable autorefresh (...back in the day and we learn fast!).
I will try IMAP now. Overnight, i just observed that no new emails appeared in my N900. Until i hit Send & Receive manually. The auto refresh didn't work for some reason even though wifi was on all night. Getting deja vu here (on my E71).

Me too and it works flawlessly for me, and it has the really nice touch that all my appointments show up in the calendar when i click on the system clock in the tray
dont have my n900 or ubuntu laptop with me, but im sure there should be a setting on the N900 telling it to check for mail every x minutes

the good point of this is if you set up imap on all your devices, and delete a junk message say from your phone, it will be deleted from all other devices as well.
when they are deleted, they are not permanently deleted, they do into the imap deleted folder, so should still have been easy to recover. (this is a different trash can from your local one...they deleted stuff wont appear in there)
but then again this *is* the n900 we are talking about, so maybe not
if you feel unsure what do do, set up a free test gmx account and use it for testing, setting it up for imap access on both the phone and evolution, im sure you will find it will work a treat.
