There is a "New SMS" button at the top of the screen in Conversations, next to the "New IM" button.

It's not in the menu, it's at the top of the screen.

I'm not really sure how you could miss...

Very short and sweet tutorial this one:

You can search contacts directly from the desktop by just typing on the keyboard. You don't even need to have the contacts app open, it opens automatically...

You don't even need to do that. You can start typing on the desktop and it will automatically open the contacts list at that letter.

The number of downloads is only for Extras. Extras is disabled by default on most versions of the firmware, so most N900 users don't know about it and cannot access it by default.

Not really, cellular components are cheap and small and getting cheaper and smaller all the time. The extra cost of 3G would probably be something like 10% of the total price or less.
